Cinderwood’s produce drives the menus at Higher Ground as well as supplying some of Manchester’s most loved restaurants and bakeries: The Edinburgh Castle, The French, Isca, Yellowhammer, Onda, Pollen Bakery and Honest Crust.
Cinderwood is a one and a half acre market garden in Cheshire built upon a relationship between a chef, Joseph Otway, and a grower, Michael Fitzsimmons, who believe in farming food for flavour.
Founded in 2020, the market garden was born from the idea that good food should be flavourful, nutritious, easily accessible and grown responsibly. Ingredients are grown with an emphasis on flavour, experimenting with varieties and focusing on maintaining rich, healthy and biodiverse soil.
We aim to use the partnership between the kitchen, dining room and farm to create a better awareness of where good food comes from. By increasing the understanding between those who grow, those who cook and those who eat, we can take better ownership of our food system.
